Today my walk was very enjoyable. Went to a few places around the mill that I have not been. Exploration. Megan received a new camera for her birthday and I finally got my chance to use it. like it!

Megan & Joshua traverse south towards a weekend of food, tennis, big city life, and art. What does all this add up to? Fun and memories on Joshua's birthday weekend! An old and new friend put the dynamic duo up and treated them to a weekend full of hospitality and more happy thoughts than one expects to stumble on in one action packed weekend.
The matches for Monday day session were Marty Fish(usa)* VS. Gael Monfils(fra), Rafael Nadal(esp)* VS. Sam Querrey(usa), part of Agniesza Radwanska(pol) VS. Venus Williams(usa)*, and part of Michal Mertinak(svk) & Lovro Zovko(cro) VS. Bob & Mike Bryan(usa)*. The asterisk denotes who won and the matches were all fun to watch and experience. Seats were a little high up but the court was easy to see and the image viewing screens were helpful. Also, they have these radios that allow you to listen to comentary from the television cast.
Food is good in NYC and friends are wonderful there.

Vegan Carrot Ginger Muffins
I found these on Group Recipes. Just made them and they are great. I substituted whole fruit apricot jelly for the apple sauce and candied ginger for fresh and dried cranberries for raisins. Moist and tasty...
Ingredients
- 2 tbsps ginger, grated .
- 2 medium carrots, grated .
- 2 tbsps applesauce .
- 1 c raisins .
- 1/2 tsp cinnamon .
- 1 tsp baking soda .
- 2 c flour .
- 1 tsp baking powder .
- 1/2 tsp salt .
- 1/2 c sugar .
- 3/4 c soy milk .
- 2 eggs, equivalent .
- 2 tbsps oil
Directions
- Step #1 Preheat oven to 400F degrees.
- Step #2 Mix dry ingredients.
- Step #3 Add wet ingredients.
- Step #4 Stir until mixd.
- Step #5 Bake for 12-15 mins.

I encountered birds on
my bike ride a few moments ago. Many people out on the path today but noneseemed to want to stop for me to interview them. Spent time with the birds. My Grandmother does not care for them. Mother probably does not like for me to concentrate on focusing my camera while biking. Birds are o.k. . .

The Apeiron Sustainable Living Festival down in Coventry, RI went great. It was a bunch of work helping put food out to about two thousand environmentally conscience people. We served watermelon (perfect for the ultra sunny conditions), black beans and jasmine rice, Greek pasta salad, baked zitti, veggie dogs and burgers, and a bunch of water and assorted drinks. Nick's on Broadway also set up shop for the festival, serving fresh fruit salad and other toppings and granola (among other fabulous offerings).
The folks soaking in the music and sustainable suggestions seemed to have a great time both Saturday and Sunday. A "green" scooter was raffled off and I even saw a few festival goers slip into the pond to cool off. A Yoga tent and massage booth were set up. There was so much going on that I had a hard time keeping up. You should go to Apeiron's web site for more on how it went (click on logo at top)
I had a blast. Almost recovered.

Sweet Vegan Cornbread
1 cup yellow cornmeal
1 teaspoon baking soda
1/3 cup unrefined sugar
1/2 teaspoon salt
1/4 cup canola oil
1 teaspoon apple cider vinegar
Mix and add to a oiled preheated to 400 degree iron skillet
Bake at 400 degrees for fifteen minutes
Let cool a bit, cut and enjoy with white bean tofu chili!

How to sprout mung beans at home
Materials: 1/2 cup whole mung beans, several sturdy paper towels, twine, a fine sieve, a pot with a lid (the beans will expand to about 3 times during the sprouting process so choose pot size accordingly).
Step 1. Sort through the beans and pick out any small stones or other foreign material.
Step 2. Place the beans in the sieve and rinse thoroughly.
Step 3 . Soak the beans in warm water for 8-10 hours, then drain thoroughly.
Step 4. Place the drained beans in the center of a couple of the paper towels.
Step 5. Lift up the edges and tie together with twine.
Step 6. Place the wrapped beans in the pot and cover.
Step 7. Place the pot in a warm dark spot for 24 hours.
Step 8 . Check the sprouts after 24 hours. If you want them longer, place the beans in the sieve and gently rinse them, then repeat steps 4 through 7.
Note: For ayurvedic cooking, sprouts about an inch long are best. When the sprouts are rinsed before cooking, most of the green skins wash away. It's fine if a few are left behind.

pumpkin chocolate chip bread
4 each eggs (egg replacer!)
1 cup canola oil
2/3 cup water
1 1/2 cup unrefined sugar
2 teaspoons baking soda
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
1 teaspoon ground clove
1 teaspoon ground ginger
1 cup small chocolate chips (carob chips)
- preheat oven to 350 f.
- blend wet ingredients with sugar well.
- sift dry ingredients together.
- stir dry ingredients into wet.
- add chocolate chips.
- bake for one hour.
