Vegan Carrot Ginger Muffins

I found these on Group Recipes. Just made them and they are great. I substituted whole fruit apricot jelly for the apple sauce and candied ginger for fresh and dried cranberries for raisins. Moist and tasty...



Ingredients

  • 2 tbsps ginger, grated .
  • 2 medium carrots, grated .
  • 2 tbsps applesauce .
  • 1 c raisins .
  • 1/2 tsp cinnamon .
  • 1 tsp baking soda .
  • 2 c flour .
  • 1 tsp baking powder .
  • 1/2 tsp salt .
  • 1/2 c sugar .
  • 3/4 c soy milk .
  • 2 eggs, equivalent .
  • 2 tbsps oil

Directions
  • Step #1 Preheat oven to 400F degrees.
  • Step #2 Mix dry ingredients.
  • Step #3 Add wet ingredients.
  • Step #4 Stir until mixd.
  • Step #5 Bake for 12-15 mins.
